Ingredients

  • 4 chicken cutlets
  • 1.5 cups flour
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 2 cups chicken broth
  • 2 tablespoons butter
  • 1 bunch collard greens, chopped
  • 2 slices bacon or smoked turkey
  • Oil for frying
  • Salt and pepper to taste

Instructions

  1. 1

Season chicken and dredge in flour seasoned with garlic powder and paprika (save 2 tbsp flour).

  2. 2

Fry cutlets in oil until golden and cooked through; drain.

  3. 3

For the gravy: melt butter, whisk in the reserved flour, then slowly add broth and simmer until thick.

  4. 4

For the greens: simmer collards with bacon or smoked turkey until tender, 30-40 minutes.

  5. 5

Plate a bed of greens, set the fried chicken on top.

  6. 6

Smother generously with the brown gravy.

Liz's Tip:

Let the fried chicken rest on a rack, not paper towels, so the bottom stays crisp under the gravy.
