Chicken & Chickpea Yellow Rice

Ingredients
- 4 chicken thighs
- 2 cups basmati rice
- 1 can (15 oz) chickpeas, drained
- 1 onion, sliced
- 3 cloves garlic, minced
- 1 teaspoon turmeric
- 1 teaspoon cumin
- 1/2 teaspoon cinnamon
- 3.5 cups chicken broth
- 3 tablespoons oil
- Salt and pepper to taste
Instructions

Season chicken and brown in oil in a large pan; remove and set aside.

In the same pan, sauté onion and garlic until soft.

Stir in turmeric, cumin, and cinnamon and toast for 30 seconds.

Add rice and chickpeas, stirring to coat in the spices.

Pour in broth, nestle the chicken back in, and bring to a boil.

Cover and cook on low 20-25 minutes until rice is fluffy and chicken is done.
